Like Mini Drumsticks with Vietnamese Coleslaw

Servings: Serves 2

Ingredients

1 pack (180g)
Like Mini Drumsticks (or Like Nuggets)
parsley root, or parsnip if you can’t find parsley root

For the Vietnamese coleslaw

For the dressing

Method

Finely slice the cabbage. Peel the carrots, and keep using the peeler to make long slices for the coleslaw. Peel and grate the parsley root. Mix all the veggies in a bowl.

Mix yoghurt, mayo, lime juice, grated ginger (including the skin, no need to peel it) and add a little salt to taste. Mix well and pour over the veggies. Mix well and add the coriander.

Whisk all ingredients for the dressing together in a bowl.

Heat vegetable oil in a pan and fry the Like Mini Drumsticks or Like Nuggets for approx. 8 minutes on medium heat. Make sure to turn occasionally and get all four sides nice, crispy and golden.

Transfer the coleslaw into a serving bowl, place the Like Mini Drumsticks or Like Nuggets on top and drizzle some dressing over it.
