In a large frying pan, heat the coconut oil over a medium-high heat. Add the onion and garlic and sauté for 3-4 minutes. Then add the sweetcorn, red and yellow pepper and jalapeños, and cook for a further 3-4 minutes.


Add the Cajun spice, smoked paprika, liquid smoke, stock cube and soya milk. Stir well, then leave to simmer for about 20 minutes until the milk is nearly all absorbed and the vegetables have all softened. Season to taste before serving.
