Marinated Tofu Feta Greek Salad

Servings: Serves: 6 as part of a meal

Cut the tofu into cubes or slabs and mix together all the marinade ingredients. Pour the marinade over the tofu and toss so that it is coated. Set aside in the fridge for at least 2 hours but preferably overnight.


When ready to serve, whisk the dressing ingredients together and check the seasoning.


Toss the salad ingredients with the marinated feta and pour over the dressing. Toss again and transfer to a serving platter to serve.
