Meals in Minutes – Black Pepper Tofu With Cauliflower Rice

MINUTES 1-5:

Break the cauliflower into florets and add to a food processor. Pulse until it had broken down to resemble rice. Transfer to a large frying pan and set aside. Cut the tofu into 2cm cubes and place in a shallow dish.

MINUTES 6-15:

Drizzle the tofu with a little light soy sauce and toss to coat. Sprinkle over the cornflour and toss once again. Heat a little oil in a large frying pan and add the tofu. Cook, turning regularly, until crispy and golden on all sides. Remove from the pan onto kitchen paper and set aside.

MINUTES 16- 25: Wipe the tofu pan with kitchen paper and add a little more oil. Heat the oil over a high heat and add the green pepper, and most of the spring onions. Stir fry for a couple of minutes before adding the ginger, garlic and chilli to the pan. Continue to cook for a further 2 minutes. Add the sauces and the crushed pepper to the pan and allow to bubble for 4 minutes, until thickened and reduced.

MINUTES 26-30: Place the cauliflower pan over a high heat and season with the sesame oil and a little salt to taste. Stir fry for 3 minutes, or until piping hot and steaming. While the cauliflower is cooking stir the dairy-free butter into the tofu sauce. Serve in bowls, with the tofu spooned over the top and garnish with some extra spring onion.
