Meals in Minutes – Patatas Bravas

Servings: Serves 4 as a tapas dish, starter or side

Preheat your oven to 180°C (Gas Mark 4, 350°F). Bring a large pan of salted water to a boil and add the potatoes. Bring back to the boil, cover and simmer for 7 minutes, or until just starting to become tender. Drain well and leave to steam dry for a couple of minutes.


MINUTES 13-15:

Toss the potatoes with 2 tablespoons of olive oil and a sprinkle of sea salt. Arrange in a roasting tray and transfer to the oven to cook for 40 minutes or until golden and crispy.


MINUTES 15-20:

To make the sauce, gently heat 1 tablespoon olive oil in another pan and add the onion, chilli and garlic. Sauté for a few minutes, until fragrant, and add the rest of the sauce ingredients to the pan. Stir well, bring to a simmer, and leave to cook gently until the potatoes are ready, stirring occasionally.


MINUTES 21-50:

Place all the ingredients for the aioli in a jar or jug and pulse with a hand blender until thickened and smooth. Taste, and adjust the seasoning is necessary. Set aside until ready to serve. When the potatoes are cooked, serve immediately, topped with the tomato sauce and a generous helping of aioli.
