Meals in Minutes – Smoky Jackfruit Cowboy Chilli

0 - 3 Minutes
Heat the oil in a large, shallow pan and add the onion and a pinch of salt. Fry gently for a couple of minutes, until beginning to soften.

4 - 10 Minutes
Add the squash, garlic, chillies, jackfruit and dried spices to the pan and continue to cook, stirring well, for 5 minutes.

11-15 Minutes
When the spices are fragrant, add all the remaining ingredients to the pan and bring to a simmer.

16-35 Minutes
Leave the chilli to simmer for 20 minutes, stirring occasionally to break up the jackfruit as it cooks. When ready to serve, taste the seasoning and adjust if necessary.
