Meals in Minutes – Coconut Dhal with Quick Flatbreads

MINUTES 1-5:

1. Fill the kettle and boil.

2. Prepare the ingredients for the dhal by slicing the onions and garlic, grating the ginger, and chopping the tomatoes.

3. Place a large pot over a medium heat and add the coconut oil, onions, garlic, ginger and whole spices.

MINUTES 6-10:

1. Add all the rest of the dhal ingredients to the pot, using 500ml hot water from the kettle.

2. Mix together well, bring to the boil and leave to simmer on a medium low heat while you prepare the flatbreads.

MINUTES 11-15:

1. To make the flatbreads, in a large bowl, mix the flour and salt together and gradually mix in the oil and water until you can bring the dough together with your hands.

2. Turn out onto a floured worktop and knead briefly for 2 minutes.

3. Divide the dough into 8 balls and keep covered with a tea towel until ready to cook.

MINUTES 16-20:

1. Stir the dhal well, making sure that the lentils aren’t sticking to the bottom of the pan.

2. Add more water if necessary as the dhal cooks, so that it doesn’t dry out before the lentils have softened.

3. Add a couple of large pinches of salt to the dhal.

MINUTES 21-28:

1. Place a large, heavy based frying pan over a medium high heat.

2. On a floured surface, roll out the flatbread dough portions as thinly as possible.

3. Place one flatbread into the dry frying pan and cook for a few seconds until starting to change colour.

4. Flip the flatbread over and cook for a few seconds on the other side until it begins to puff up.

5. Remove from the pan and replace with the next one.

6. Wrap the flatbreads in a tea towel once you have cooked them to keep them soft.

MINUTES 29-30:

1. Taste the dhal to check the seasoning and adjust if necessary.

2. Serve in bowls, with the flatbreads and some rice, if using.

3. Sprinkle with fresh coriander.
