Mediterranean Chickpea Salad



Mix together all the dressing ingredients in a bowl and whisk until slightly thickened.


Add the chickpeas, prepared vegetables and herbs to a large bowl and toss together.


When ready to serve, pour over the dressing and mix everything together well. Transfer to a serving bowl or platter and garnish with lemon wedges to squeeze over.

     Have not tried this yet, but a plan to. Would like to know what Courgette is? And is there a substitute for Extra Virgin Olive oil?

      Hi Karen, Courgette is also known as zucchini, it is part of the squash family. You can use any oil as a substitute for Extra Virgin Olive Oil, however Extra Virgin Olive Oil has a more flavourful taste for this dish. Best Wishes Jess
