Moroccan Spread – Zaalouk

Heat the olive oil in a medium-sized pan over a medium-high heat. Add the aubergines, tomatoes, garlic and ras el hanout; stir for 2-3 minutes, then turn the heat down, cover and leave to cook gently for roughly 20 minutes until the aubergine has softened.


Uncover the mixture and mash the zaalouk with a fork. Then turn the heat up and cook, uncovered, for 3-4 minutes until the mixture has thickened. Mix in the chopped coriander and lemon juice and season to taste, before serving.
