Preheat the oven to 190°C/375°F/Gas 5. Line two baking trays with greaseproof paper.
In a bowl, mix together the dry ingredients, then set aside.
Add the coconut oil, flax eggs and vanilla to the dry ingredients, and stir until the mixture is thoroughly combined. Now mix through the chocolate chips.
Take about 2 tablespoons of cookie dough and roll it into a ball, or, like us, use an ice cream scoop. Lay each ball on one of the greased baking trays and flatten them slightly with your hands. Make sure the dough balls are sat quite far apart, as the cookies will spread out a lot when they’re baking.
Place the cookies in the oven, to cook for around 15-20 minutes.
Let the cookies cool completely before removing them from the baking tray — they will firm up as they cool.
