To make the energy balls, add all the ingredients apart from the desiccated coconut into a food processor and pulse until a dough-like consistency forms, which is not smooth. Split the mixture into 12-16 pieces and roll into balls, then roll the balls in the desiccated coconut to coat them and place in the fridge to set for 2-3 hours.
