One Pot Curry Risotto

Heat the coconut oil in a medium-large pot over medium heat. Add the onion, garlic and chopped pepper and sauté for 3 minutes. Then add the water, coconut milk, carrots, brown rice, chickpeas, soy sauce and curry powder.


Cook over medium heat, with the lid on, for 30 minutes. Stir occasionally. Then remove the lid and cook for another 20 minutes, to allow some of the water to evaporate. Again, stir occasionally. Cook for the last 5 to 7 minutes with the lid on, taste the rice to make sure it’s tender and remove from heat.


Season with salt and cayenne pepper to taste and top with the fresh coriander (cilantro).
