Pea and Sweetcorn Fritters

Servings: Serves 4 (8 fritters)

Per serving (137g) Calories 220, Fat 9.5g, Saturates 1.4g, Sugars 4.2g, Salt 0.25g


100ml (scant 1/2 cup)
200g (1 3/4 cup)
frozen sweetcorn and peas mixed (or tinned is fine too)
Salt And Pepper, to taste

To serve:



Sieve the flour and baking powder into a large bowl. Add the flax egg and non-dairy milk and mix well.


Stir in the peas, sweetcorn and spring onion, mustard and nutritional yeast and mix until well combined.


Season to taste with salt and pepper.


Heat a little oil in a frying pan and add in a heaped tablespoon of the fritter batter. Press down gently with a spatula and repeat until the frying pan is full.


Fry the fritters on a medium heat for approximately 5 minutes on either side, or until they are golden brown and cooked through.


Serve immediately with a little yoghurt.
