Peanut Butter Blondies

Preheat the oven to 180°C/355°F/Gas 4. Add the chickpeas, maple syrup, peanut butter, vanilla extract, baking powder, ground almonds and milk to a blender and blend until smooth.


Transfer the mixture to a bowl and fold in the cashews and dates. Then transfer the mixture to a lined baking tray and place in the oven to bake for 20-25 minutes, until the edges are starting to brown. Allow to cool before cutting.
