Pecan and Maple Pinwheel



Preheat the oven to 180°C/355°F/Gas 4, then mix together the crushed pecans, light soft brown sugar and two tablespoons of maple syrup in a bowl until a thick, dough-like consistency forms. Split the mixture
into six pieces, roll them into balls then flatten them.


Place the mixture into the centre of the puff pastry squares, and use a knife to cut a slit on each corner towards the centre of the square, stopping at the pecan mix. Fold one corner of each triangle into the centre and press down to seal them.


Using a pastry brush, glaze the pastries with the remaining maple syrup and place a pecan half in the centre. Place the pinwheels onto a lined baking tray and bake for 15-20 minutes until the pastry is cooked and golden.
