Method

In a saucepan over a medium heat add the coconut milk, maple syrup and piña colada flavouring and bring to a slow boil.

Add the agar to the pan and whisk, allow to simmer for 3-4 minutes, until the agar has dissolved. Pour the mixture into the glasses and set overnight.

Then for the salsa, mix all the ingredients together in a bowl. Once the panna cotta is set, spoon over the pineapple salsa.
