Pink Grapefruit, Avocado And Watercress Salad

Arrange the watercress on a serving dish or 2 plates.

Carefully slice the grapefruit into think rounds and arrange these on top of the watercress.

Peel the skin from the avocado halves and slice or chop into bite-size chunks. Arrange these over the salad also.

Finally, cut long strips from the cucumber to make ribbons. Roll each strip up individually and arrange over the salad to serve. Season with salt and plenty of black pepper just before serving.
