Deep-Fried Plantain Fritters with Pebre

Fill a large saucepan or deep-fryer with sunflower oil and heat to 180°C (Gas Mark 4, 350°F), or until a cube of bread thrown into the oil browns in 30 seconds.

Put all the remaining ingredients except the flour in a food processor and blend together until smooth and creamy. Add the flour and blend together again until well combined.

Working in batches, carefully drop small spoonfuls of the mixture into the hot oil and cook for 5 minutes until the fritters have puffed up and are golden brown. Remove from the pan with a slotted spoon and drain on kitchen paper. Serve immediately accompanied by Pebre.
