Polish Christmas Cookies

Servings: Makes: approx 24, depending on size

Ingredients

Cream the margarine and vegan ‘cream cheese’ together until smooth. Mix in the flour, salt, icing sugar and cinnamon. Chill in the freezer for 30 minutes before using.

Roll out into a large thin piece of pastry.

Cut out various shapes.

Bake at 180°C (Gas Mark 4, 350°F) for approx 15 minutes or until golden.

FOR THE STARS:
1. Cut out 2 stars one large, one slightly smaller. Cut a tiny star out of the smaller star.

2. Bake until golden.

3. Sandwich the large and slightly smaller star together with jam.

4. Dust with icing sugar or drizzle with icing.

FOR THE FOLDOVERS:

1. Cut a perfect square and spread a slice of marzipan and some apricot jam from corner to corner and top with some glace cherries.

2. Fold the opposite corners over so they overlap. Bake until golden and dust with cinnamon.

3. Cut out a triangle, brush with fig jam and roll up to form a croissant shape.

4. Bake until golden and when cool drizzle with icing and flaked almonds.
