Potato, Courgette and Red Pepper Skewers with Garlic Butter

Method

Add the potatoes to a pan of boiling water and cook for 10-15 minutes until cooked, then drain.

To make the garlic butter, mix together the butter, garlic and rosemary.

Next push three halves of potato, three pieces of pepper and three pieces of courgette onto skewers. Coat these in the garlic butter and cook on the BBQ for 3-4 minutes on each side.
