Potato Skins stuffed with Pulled BBQ Banana Peel

To prepare the banana skins, remove the ends, then scrape the insides to remove all white stringy pieces. Using a fork, scrape down the banana skin to make shreds.

Add the oil to a frying pan over a medium heat and fry the skins for 4-5 minutes until they have softened. Add the soy sauce, passata, soft brown sugar, Worcester sauce, liquid smoke and smoked paprika and allow to simmer down for 8-10 minutes until the sauce is thick and sticky.

Preheat the oven to 200°C/400°F/Gas 6, fill the potato skins with the BBQ banana peel and top with cheese, then bake for 10-15 minutes.
