Raspberry Mousse

Servings: Serves; 4

Ingredients

60ml (1/4 cup)
Water
80ml 91/3 cup)
80ml 91/3 cup)
Fresh fruit, to serve

Method

Combine the raspberries and water in a high-speed blender until all the raspberries are broken down.

Add rest of the ingredients to the blender and blitz until very smooth. This will take about 6 minutes.

Divide the mixture into individual serving dishes and chill for at least 2 hours. Garnish each portion with fresh fruit (we used blueberries and raspberries), before serving.
