Brussels Sprouts with Grapes and Walnuts

Heat oven to 230°C (Gas Mark 8/450°F).

Toss together your sprouts and grapes with oil and thyme, then season with salt and pepper.

Roast until tender, about 20 minutes.

Drizzle with vinegar and toss in walnuts.

Stir until combined.
