Roasted Red Pepper Pasta Salad

Servings: Serves 6 as part of a meal

Cook the pasta according to the package instructions or until al dente and drain well.


Add the peppers to a food processor with the garlic, olive oil, paprika and seasoning. Whizz to make a puree and taste to check the seasoning.


Mix the pepper sauce with the pasta, sweetcorn and most of the sliced spring onions.


To serve, place in a large bowl or on a serving platter and sprinkle over the remaining spring onions. Dust with a little extra paprika, if you like.
