Roasted Vegetable and Chickpea Pâté

Pre-heat the oven to 200°C/400°F/Gas 6, then add the garlic, carrot, courgette and red pepper to a tray and drizzle with the olive oil, Place into the oven to roast for 30 minutes until the carrots are cooked.


Then add the roasted vegetables, chickpeas, walnuts, sundried tomatoes and black olives to a food processor and blend until almost smooth, season to taste.
