Samphire Saag Aloo

Bring a pan of water to the boil and add the potatoes. Allow them to boil for 10-15 minutes until they are cooked but still maintaining their shape. Remove them from the heat and drain.


Add the oil to a large frying pan over a medium-high heat and add the onion, garlic, cumin seeds and black mustard seeds. Fry for 2-3 minutes, until the onions have softened and the seeds begin to crackle.


Add the ginger, chilli, potatoes, samphire, garam masala and turmeric, and fry for a further 4-5 minutes, until the potatoes start to colour. Add the spinach and vegetable stock, and simmer for 5-6 minutes until the liquid has almost fully absorbed and the spinach has wilted.
