Satay Tofu Skewers

Steamed fresh greens (we used asparagus and tenderstem broccoli)
Cooked Rice
Mild Red Chilli



To marinate the tofu, cut the block into 6 strips and halve them lengthwise. Mix all the other tofu ingredients together in a non-metallic bowl and add the tofu, mixing well so that each piece is well coated in the marinade. Set aside to marinate for at least half an hour. This step can also be completed the night before and kept in the fridge until ready to cook.


Once the tofu is ready to cook, preheat the oven to 180°C (Gas Mark 4, 350°F). Thread each strip onto a skewer, reserving the marinade for the sauce. Place the skewers on a lightly oiled baking tray and cook in the oven for 30 minutes, turning half way through.


Pour the reserved marinade into a pan and add the satay ingredients. Heat this mixture gently, stirring until you have a smooth sauce. Keep hot until ready to serve.


When the tofu is ready, remove from the oven. Serve in bowls with some cooked rice, greens, some tofu skewers and a generous helping of the sauce. Sprinkle over some chilli, if using, and serve immediately.
