Sea Salt Avocado Truffles

Method

Melt the chocolate in 30 second blasts in the microwave until smooth.

Puree the peeled and de-stoned avocado in a blender or push through a sieve to create a lump free paste.

Mix the avocado, chocolate, maple syrup, salt and vanilla until smooth and combined.

Roll the truffles into evenly sized balls and roll half in the cocoa powder and half in the icing sugar to coat.

Sprinkle a few salt flakes to decorate the top of each truffle, if desired. Keep refrigerated until needed.
