Beer Marinated Seitan

Method

Place the thinly sliced seitan in a medium-sized bowl. Add in the red onion, garlic, lime juice and beer.

Using your hands, mix all the ingredients together so all the flavours can marinade together. Cover and leave in the fridge for 2-6 hours.

Remove the seitan from the marinade, and then save back the liquid using a sieve to separate it from the onions and garlic.

Fry the seitan on a medium heat until browned on all sides.

Add in the marinade and reduce until only a small amount of liquid remains in the pan, which has now thickened.

Serve with warm tacos, fresh guacamole, sour cream (unsweetened soya or coconut yoghurt mixed with lemon juice to taste), finely sliced lettuce and your favourite chilli sauce.
