Seitan ‘Duck’ Pancakes with Hoi Sin Sauce



Heat all of the sauce ingredients in a pan and whisk until the maple syrup has dissolved and the sauce has thickened. Set aside.


Prepare the beansprouts, red pepper strips and mock duck for pan frying. Heat a little oil in a frying pan and then add the beansprouts, red pepper and duck strips. Turn up the heat so the “duck” is sizzling - this will sear it a little and add more colour.


Get the shredded cucumber and spring onions ready, and steam the Chinese pancakes in a bamboo steamer or in the microwave.


When the “duck” is cooked, pour into separate bowls and serve with the shredded cucumber, hoi sin sauce and pancakes. Let your guests do the rest!
