Smiley Face Tomato and Red Pepper Tarts

To make the houmous, add the chickpeas, tahini, garlic, salt, lemon juice and sun-dried tomatoes to a food processor and blend
until smooth.


Pre-heat the oven to 200°C/400°F/Gas 6, then using a saucer as a template cut 4 circles out of the puff pastry sheet. Split the houmous between the 4 circles and spread evenly, leaving a small border. To decorate the tarts, place 2 halves of cherry tomatoes as eyes, then cut a slice of red pepper for a mouth, and small triangles as the nose. Place the tarts into the oven to cook for 20 minutes until the pastry is golden and cooked.
