Preheat oven to 180°C, (Gas Mark 4, 350°F).
Fry the onion, celery and garlic until translucent then add the pepper and continue to cook for another couple of minutes.
Add the rest of the ingredients to the pan, except the sausages and simmer gently for a few minutes
Add the vegan sausages and transfer to the oven.
Bake for approximately 15 minutes or until the all the stock has been absorbed and the orzo is cooked through.
