Smoky Maple Baked Beans

Put fine sea salt and freshly ground black pepper in a large saucepan over high heat, combine the navy beans and 960ml (4 cups) of water and bring to a boil. Boil uncovered, until the beans just begin to soften for about 30 minutes. Remove from the heat, drain, and set aside.


Preheat the oven to 180°C (Gas Mark 4, 350°F) if cooking indoors. Or, prepare grill if cooking on the camp fire.


Using either a Dutch oven with a lid or saucepan with a lid, warm the olive oil over medium heat.


Add the onions and bell pepper and sauté until softened, 5 to 7 minutes. Add the garlic and sauté until fragrant, about 30 seconds more.


Remove from the heat and stir in the maple syrup, tomato paste, cooked beans, chile, liquid smoke, 480ml (2 cups) water, and vinegar. Cover and bake until the beans are very soft, about 1 hour.


Taste and season with salt and pepper. Serve immediately
