Smoky Potato Salad

Servings: Serves 4

Ingredients

500g (17.6 oz)
Handful
fresh parsley and chives
4 rashers
2 tbsp
The Vurger Co. Smoky Bacon Mayo
1 tbsp
lemon juice
Pinch of
salt and pepper

Method

First, add your potatoes to a saucepan of salted water and bring to the boil. Boil for 15 minutes until fork tender.

Drain your potatoes and leave to cool. In the meantime, chop your spring onions and herbs.

Cook your vegan bacon according to package instructions. Once cooked, chop into lardons.

When your potatoes have cooled, add into a mixing bowl with Smoky Bacon Mayo, spring onions, oil and lemon juice.

Add in your fresh herbs, vegan bacon and season well.

Refrigerate until you are ready to serve, enjoy!
