Here is our vegan version of the Greek classic, Spanakopita. The layers of crunchy filo pastry paired with the creamy ‘cheese’ and spinach creates a satisfying texture and a delicious comforting flavour.
Top Tip: The assembled, unbaked pie can be frozen for up to 3 months. Wrap well in parchment paper, followed by foil before freezing. Defrost overnight in the fridge before baking as above.
