Squash and Red Onion with Tahini and Za’atar

Ingredients

For the roast butternut squash and onion

For the dressing

Method

Preheat the oven to 180°C/355°F/Gas 4, then mix the olive oil, za’atar, butternut squash and red onion together and spread on a baking tray. Place in the oven to roast for 35-45 minutes, or until the squash is cooked.

Whilst the squash is cooking make the dressing. Use a food processor to blend together the tahini, lemon juice, water and garlic until smooth.

To finish the dish, drizzle the roasted butternut squash and red onion with the dressing, then top with pine nuts, za’atar and chopped parsley.
