Sweet Potato, Aubergine and Chickpea Tagine

Heat the oil in a large pan and add the onion, celery, sweet potato, carrot, garlic and aubergine. Season with a little salt and cook for 5 minutes, stirring often, until starting to soften

Add the tomato puree and the spices and cook for a further 2 minutes. Add in all the rest of the ingredients and stir well to combine. Bring to a simmer and allow to cook for 20 minutes or so, until thickened.

Taste to check the seasoning and serve over hot couscous.
