Sweet Potato, Chilli and Coconut Soup

Pour the oil into a large saucepan, over a medium heat, and add the onion, garlic, chilli and sweet potato. Cook for 3-4 minutes until the ingredients start to brown.


Next add the vegetable stock, cover the pan with a lid, and leave to simmer for 20-25 minutes or until the sweet potato is soft. Transfer the mixture to a food processor and add the coconut cream. Blend until smooth then serve.
