Tandoori Roasted Cauliflower

Method

Preheat oven to 180°C/350°F/Gas 4.
Place the whole cauliflower in a lightly oiled baking dish.

Place all the remaining ingredients in a food processor or blender and blitz until combined and smooth.

Pour the marinade over the cauliflower, making sure that it is evenly coated and that some has seeped in between the florets for extra flavour.

Transfer the cauliflower to the oven and bake for 40-45 minutes until golden brown and just tender.

Serve whole at the table with sides of your choice.
