Tempeh BLT with Spicy Garlic Mayo

Method

Heat the olive oil in a large pan over medium-high heat. Add the Tempeh Rashers and cook for 5 minutes on either side until browned.

Lightly toast the bread to your liking.

Mix the vegan mayo, cayenne pepper, smoked paprika, salt, garlic and lemon juice together in a bowl until they form a consistent mixture.

Place the lettuce and tomato on two of the slices of bread. Generously spread the mayo on top, then place the Tempeh Rashers, followed by the avocado and spring onions if you're including them. Finally, place the other slice of bread on top.

Serve up and enjoy!

    Error in recipe. No mention of tempeh rashers in ingredients list. I assume first mention of gem lettuce should say tempeh rashers.
