Teriyaki Jackfruit



To make the teriyaki sauce, add the water, cornflour, garlic granules, soy sauce, ginger, lemon juice and brown sugar to a saucepan over a medium heat. Bring the mixture to a boil, whilst whisking well to ensure there are no lumps. Once the sauce has thickened remove it from the heat.


Heat a frying pan over a medium-high heat and add the jackfruit chunks. Fry the chunks over a dry heat to brown them on all sides.


Once the jackfruit is browned add the teriyaki sauce to the pan and cook for a further 2-3 minutes. Serve the jackfruit alongside a bed of cooked rice, fresh spinach leaves and some finely-sliced carrot, and garnish with a sprinkle of sesame seeds and fresh, sliced chilli, to finish.
