Savoury Cheddar and Basil Scones

Preheat oven to 220°C (Gas Mark 7, 425°F). If using a pizza stone, add to oven while preheating.


In a large bowl, combine flour, baking powder, sugar, flaxseed, sea salt, pepper, and garlic powder. Whisk with a pastry cutter to incorporate.


Cut butter into mixture with pastry cutter until mixture appears crumbly.


Add almond or soya milk, lemon juice, fresh basil, and 75g (¾ cup) cheddar. Mix until just incorporated. Dough will not be completely smooth.


Gather dough into a ball and place on a lightly floured surface. Roll dough into ½-inch-thick square. Cut into triangles of desired size.


Place scones on a baking tray or floured surface (if using pizza stone) and top with dried basil and remaining 25g (¼ cup) cheddar. If baking on a pizza stone, carefully transfer scones to hot pizza stone when ready to bake.


Bake for 18 to 20 minutes, or until golden brown.
