Chocolate Coated Date Caramels

Soak the dates in boiling water for 10 minutes until softened and sticky, then use a stick blender to blend to a smooth paste. Stir in the coconut flour until smooth, then place the mixture into the fridge for 30 minutes to firm slightly.


Remove from the fridge and make into 16 balls; place back into the fridge for 1 hour to firm up. Dip the date balls into the dark chocolate until fully coated, then place back into the fridge to set the chocolate.
