Tofu, Spinach, and Sesame Seed Stir-Fried Pitta

Method

Heat your olive oil over a medium-high heat in a large wok. Add the cubed tofu.

Stir-fry until the tofu is lightly browned (about 5 minutes).

Add the garlic and ginger, cook for a further minute, and add soy sauce to taste.

Add the spinach and cook until the spinach wilts. Stir in the sesame seeds and remove from heat.

Drizzle with the sesame oil, and more soy sauce to taste.

Toast your pitta breads and slice open.

Using tongs, stuff your pitta breads, and serve hot.
