Vegan Pulled Pork Chilli Loaded Nachos

Ingredients

1 tbsp
oil
2
cloves garlic, crushed
2
peppers, sliced
100g (3.5 oz)
mushrooms, sliced
1 tsp
1 tsp
1 tsp
mixed herbs
1 carton
2-3 slices
Chilli Jalapeño Cheddar Sheese

Method

Cook the onion and garlic in the oil in a large pan for 5 minutes, then add the peppers, mushrooms, herbs and spices and continue cooking for 5 minutes.

Add in the soy sauce and maple syrup and continue cooking for a further 3-4 minutes.

Pour in the passata, add in the kidney beans and jackfruit and simmer for 10 minutes until the sauce has thickened.

Place the tortilla chips in a wide oven-proof dish. Tear up the Sheese slices and arrange over the chips. Spoon over the jackfruit mixture and place under the grill or in the oven for a few minutes to melt the Sheese and crispen the chips slightly.

Serve with guac and salsa and dig in!
