Vegan Welsh Rarebit

Ingredients

30g (1oz)
80g (1/3 cup)
120ml (1/2 cup)
180g (6oz)
vegan smoked cheese (we used Applewood)

Method

Add the butter and flour into a saucepan over a medium heat and cook for 3-4 minutes to make a roux. Slowly add the Guinness and soya milk whilst mixing and cook for 4-5 minutes until a smooth thick sauce is formed. Then add the mustard, Worcestershire sauce and cheese, and whisk until smooth, season to taste.

Toast one side of the bread under the grill, then spread some of the mixture onto the untoasted side and place back under the grill for 3-4 minutes until the sauce has coloured and set.

     I make a quick variation
    I also use soya milk but I just grate the cheese add enough milk to form a thick gluppy like mixture leave it for a short time, then just spread it on toast even better with onion 🌰
