Vegetable and Chickpea Tagine

Heat the oil in a saucepan over a medium heat, and add the onion and garlic and cook for 1-2 minutes until the onion starts to soften.


Add the peppers, baby corn, green beans and courgette, then add the ginger, cumin, chilli, cinnamon and coriander, and cook for another 1-2 minutes.


Add the chickpeas, chopped tomatoes and stock, and simmer for 15-20 minutes until thickened.
