Faux Sloppy Joes Made With Seitan

Bring the lentils and water to a boil in a medium-sized saucepan. Reduce the heat to low, cover, and let simmer for 20-30 minutes, until the lentils are tender but not mushy. Drain any excess water and set aside.

Place the seitan in a food processor and pulse a few times, until you have seitan crumbles. Set aside.

Heat the olive oil in a large fry pan. Stir the garlic into the olive oil and cook until fragrant. Add the onion and salt, and cook for 2-3 minutes, until softened. Pour in the pepper, carrot, and crumbled seitan, and cook for 7-10 minutes, until the veggies are softened.

Add the lentils, along with all remaining ingredients,
and cook on medium-low for 10-15 minutes, stirring frequently, until thickened.

Top each bun with ½ cup of filling.
