Victoria’s Chunky Chickpea Chilli

Ingredients

Method

Heat oil in large saucepan on medium heat.

When the oil is hot add onions and cook, stirring frequently for around 5 minutes.

When onions are soft add the red pepper, garlic, dry spices. Stir well, and cook for a further 5 mins.

Add chick peas and stir well to coat them in flavour. Cook for 3-4 minutes.

Add the vegetable stock and mix well. Next add the tomatoes and sugar (if using). Add plenty of black pepper and salt.

Stir well and simmer gently and bring to boil.

Turn down the heat, add lid and simmer for around 20 minutes. Check and add more water if necessary.

Add the kidney beans, sweet corn and chocolate (if using).

Bring to boil and simmer for 10 minutes without lid on.

Taste the chilli, season with more salt and pepper if necessary.

Replace lid and leave to stand for 10 minutes before eating.

Serve with rice or nachos, or perhaps sweet potato wedges, baked jackets or maybe sweetcorn fritters.
