Combine all the dressing ingredients in a bowl and briefly pulse with a hand blender until thick and combined.

In a large bowl, mix together the celery ribbons, apple matchsticks and sliced onion. Add the dressing and mix well with your hands until everything is evenly coated.

Arrange on a serving platter, sprinkle over the walnuts and serve immediately.
